Prepare the persimmons and ginger. Peel the ripe Fuyu persimmons and slice them into 1/4-inch rounds. Peel the fresh ginger and slice it thinly.

In a medium saucepan, combine the water, thinly sliced ginger, brown sugar, and cinnamon stick. Bring the mixture to a boil over medium-high heat, stirring until the sugar is dissolved.

Once boiling, reduce the heat to low, cover, and let it simmer gently for 20 minutes to allow the flavors to meld. The liquid should be fragrant.

Add the sliced persimmons to the simmering liquid. Continue to simmer for another 5 minutes, just until the persimmons are slightly softened but still hold their shape.

Remove the saucepan from the heat. Carefully strain the liquid through a fine-mesh sieve into a heatproof pitcher or bowl, discarding the ginger, cinnamon stick, and persimmon slices (or reserving the persimmon slices for garnish if desired).

Allow the drink to cool to room temperature, then cover and refrigerate for at least 2 hours, or until thoroughly chilled. This drink is best served cold.

To serve, pour the chilled persimmon ginger drink into individual glasses. Garnish each glass with a few pine nuts and/or a fresh persimmon slice, if desired.
