Peel the 30-40 large garlic cloves. Roughly dice the large white onion or shallot.

In a saucepan, combine the peeled garlic cloves, diced onion, and 250 ml of olive oil. Ensure the heat is set to the lowest possible setting.

Slowly simmer the garlic and onion in the olive oil until they become buttery, soft, and caramelized. This process will take approximately 40-45 minutes. Stir occasionally to prevent sticking.

Once the garlic and onion are soft and jammy, carefully separate the garlic-infused oil from the solids. Reserve the oil for garnish or other dishes.

Transfer the cooked garlic and onion solids to a bowl. Add the 1/4 to 1/2 cup of vegan cream cheese, chopped fresh herbs (chives/parsley), and the juice from 1 lemon.

Mash the mixture with a fork or potato masher, or blend it in a food processor until it forms a smooth paste or dip. Season with salt and pepper to taste.

Transfer the garlic dip to a serving bowl. Garnish with chilli flakes, fresh herbs, and a drizzle of the reserved garlic-infused oil.

Serve immediately with bread, pasta, or anything else you wish to add a garlicky kick to. Enjoy!
