Place the sliced pancetta into a cold pan. Turn the heat to medium-low. Render the fat, flipping the pancetta occasionally, until it is crispy and deep golden brown. This will take about 8-10 minutes. Remove the crispy pancetta from the pan and set it aside on a paper towel-lined plate to drain. Reserve the rendered pancetta fat in the pan.

Place two slices of sourdough bread in the same pan with the reserved pancetta fat. Toast the bread until it is golden brown and crispy on both sides, about 2-3 minutes per side. Repeat with remaining bread slices. Remove the toasted bread from the pan and set aside.

In a blender or food processor, combine the cherry tomatoes, garlic cloves, fresh basil leaves, olive oil, salt, and black pepper. Blend until the mixture reaches a smooth consistency.

Transfer the blended tomato-basil mixture to a bowl. Add mayonnaise to the bowl. Mix thoroughly until well combined.

Take the torn lettuce pieces and season them lightly with salt and pepper. Take the large tomato slices and season them lightly with salt and pepper.

To assemble each sandwich, spread a generous amount of the prepared tomato-basil mayonnaise onto both slices of the toasted sourdough bread. On one slice of bread, layer the seasoned lettuce. On top of the lettuce, layer the seasoned tomato slices. Finally, place the crispy pancetta slices on top of the tomatoes. Close the sandwich with the other slice of bread.

Cut each assembled sandwich in half diagonally before serving.
