Preheat your oven to 340°F (170°C).

Line a 9 x 13-inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the slice out later.

In a medium saucepan, combine the butter, honey, and packed brown sugar.

Place the saucepan over low heat and cook, stirring constantly, until the butter is completely melted and the sugar is dissolved and combined with the other ingredients. This should take about 3-5 minutes.

Continue to cook, stirring occasionally, until the mixture just begins to bubble around the edges. Immediately remove the saucepan from the heat.

Add the unsweetened shredded or desiccated coconut, old-fashioned rolled oats, and cornflakes to the saucepan with the melted butter mixture. Stir well with a wooden spoon or spatula until all the dry ingredients are thoroughly and evenly coated.

Transfer the mixture to the prepared baking pan. Using the back of a spoon or your hands (lightly greased if it's too sticky), press the mixture down firmly and evenly into the pan to create a compact layer.

Bake in the preheated oven for 12–15 minutes, or until the edges are golden brown and crispy, and the center is set. Keep an eye on it to prevent burning.

Once baked, remove the pan from the oven and place it on a wire rack. Allow the Crispy Cornflake Slice to cool completely in the pan before attempting to cut it. This is crucial for it to set properly and prevent crumbling. This may take at least 1 hour.

Once completely cooled, use the parchment paper overhang to lift the slice out of the pan. Place it on a cutting board and cut into desired bar sizes.

Store the Crispy Cornflake Slice in an airtight container at room temperature for up to 5 days. Enjoy!
