In a non-stick saucepan, melt 1 tablespoon of butter over medium heat.

Once the butter is melted, transfer 2 tablespoons of the melted butter to a separate bowl; this will be used for the cake batter. Leave 1 tablespoon of melted butter in the pan.

Add 2 tablespoons of white sugar to the butter in the pan over medium heat. Stir continuously until the sugar melts and caramelizes.

Once the sugar starts to caramelize, add 1 tablespoon of juice from the canned pineapple and stir it into the caramel.

Immediately arrange the drained pineapple slices over the caramel in the pan. If desired, place preserved cherries in the center of each pineapple ring. Turn the heat off.

In a mixing bowl, beat 1 egg.

Add 1/4 cup water or fresh milk and 1/2 cup pineapple juice from the canned pineapple to the beaten egg.

Stir in the reserved 2 tablespoons of melted butter and 1 teaspoon of vanilla extract.

Add the 1 (250g) pack of MAYA Original Hotcake Mix to the wet ingredients and combine. Be careful not to overmix the batter.

Turn the heat back on for the pan with the pineapple slices to low-medium.
Pour the prepared batter evenly over the pineapples in the pan.

Immediately cover the pan with a lid.

Leave it to cook for 20 minutes or until the top of the cake is set.

To finish, invert the Pineapple Upside-Down Cake onto a serving plate.

Serve warm. It can be served with vanilla ice cream on the side or on top.
