Chop the 3 blocks of firm tofu into 1-inch cubes. Heat a large pan over medium-high heat and add enough neutral oil to coat the bottom. Pan-fry the tofu until it is golden brown on all sides.

Remove the fried tofu from the pan and set it aside on a plate lined with paper towels to drain excess oil.

Add the 1 cup of sliced button mushrooms and 1 cup of sliced shiitake mushrooms to the same pan (add a little more oil if needed). Sauté the mushrooms until they are lightly browned and have released their moisture.

Remove the sautéed mushrooms from the pan and set them aside with the tofu.

Prepare the aromatics: mince the 3 cloves of garlic, slice the 1 inch of ginger, slice the white parts of the 2 stalks of lemongrass, and mince the 2 Thai chilis.

In a medium bowl, combine the 1 1/2 tablespoons of granulated sugar, 2 tablespoons of vegetarian fish sauce, 1 tablespoon of soy sauce, 1 teaspoon of mushroom seasoning, 1/2 teaspoon of black pepper, 1 cup of coconut water, and 1/2 cup of water. Whisk well to create the braising liquid.

Add 1 tablespoon of neutral oil to the pan. Sauté the minced garlic, sliced ginger, and sliced lemongrass until fragrant, about 1-2 minutes.

Add the minced Thai chilis to the pan and sauté briefly for about 30 seconds.

Pour the prepared braising liquid into the pan and bring it to a boil over medium-high heat.

Once the liquid is boiling, add the fried tofu and sautéed mushrooms back into the pan.

Lower the heat to medium-low, cover the pan, and simmer for 15 minutes, allowing the flavors to meld.

After 15 minutes, remove the lid and continue to simmer for another 5 minutes, or until the sauce has thickened slightly to your desired consistency.

Garnish the braised tofu and mushrooms with 1/4 cup of chopped green onions, 1/4 cup of chopped cilantro, and 1/2 tablespoon of fried shallots.

Serve immediately with steamed rice and enjoy!
