Preheat oven to 400°F. Wash the sweet potatoes thoroughly and prick them all over with a fork. Arrange them on a baking sheet.

Drizzle olive oil over the sweet potatoes, then sprinkle with salt and black pepper. Bake in the preheated oven for approximately 45-55 minutes, or until the sweet potatoes are tender and cooked through. Cooking time may vary depending on the size of the potatoes.

While the sweet potatoes are baking, prepare the minced meat filling. Add 1 tablespoon of olive oil to a pan over medium heat. Once the oil is hot, add the chopped onion and sauté for about 3-5 minutes until softened.

Add the ground meat to the pan. Break up the meat with a spoon and cook for about 7-10 minutes until browned and no longer pink. You can drain any excess fat.

Add the minced garlic, paprika, cumin, tomato paste, salt, and black pepper to the ground meat. Mix all ingredients thoroughly. If the mixture is too dry, add 1/4 cup of water. Cook for another 5-7 minutes until the flavors meld and the mixture thickens slightly.

Carefully remove the cooked sweet potatoes from the oven. Cut each potato lengthwise down the middle, but do not separate completely, creating a pocket. Gently mash and fluff the inside of the potato with a fork.

Generously fill the sweet potato pockets with the prepared minced meat filling. Sprinkle shredded cheddar cheese on top.

Return the stuffed sweet potatoes to the oven (or use the broiler setting). Bake for approximately 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven. Top each sweet potato with a dollop of guacamole and a dollop of sour cream.

Garnish with fresh chopped cilantro before serving and serve hot.
