Preheat your oven to 180°C (350°F). Line a large rectangular baking tray with parchment paper.

In a large mixing bowl, crack the 8 eggs. Add the 200g of fat free cottage cheese, 160g of low fat cheddar cheese, 1 diced green bell pepper, 6 diced sundried tomatoes, and chopped chives (as needed). Season with 1 to 2 teaspoons of salt and 1 to 2 teaspoons of pepper. Whisk all ingredients thoroughly until well combined.

Pour the whisked egg mixture into the prepared baking tray, spreading it evenly across the surface.

Bake the egg mixture in the preheated oven for 20 minutes, or until set and lightly golden.

While the egg mixture bakes, prepare the breakfast sauce. In a small bowl, combine 60g of low sugar ketchup, 30g of light mayo, and 1/2 teaspoon of garlic powder. Mix well until the sauce is smooth and thoroughly combined.

Once the egg slices are baked, remove the tray from the oven. Carefully slice the large egg sheet into 6 equal rectangular portions.

To assemble each burrito, take one low carb tortilla. Spread a generous amount of the prepared breakfast sauce onto the tortilla. Place one slice of the cooked egg mixture onto the sauced tortilla. Sprinkle approximately 38g of mozzarella cheese over the egg slice. Fold the sides of the tortilla inwards, then tightly roll the tortilla from the bottom upwards to form a complete burrito. Repeat for the remaining 5 burritos.

Place the assembled burritos, seam-side down, into a pan or an air fryer. Cook until they are golden brown and crispy on the outside. (Cooking time will vary depending on your appliance; monitor closely to prevent burning).
