Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.

In a large mixing bowl (or Thermomix bowl), combine the 250 grams of butter and 160 grams of sugar. Mix for 3 minutes until light and fluffy.

Add in the 1 teaspoon of vanilla essence and 1 egg. Mix for 10 seconds until just combined.

Add the 300 grams of cake flour, 1 teaspoon of salt, 1/4 teaspoon of baking powder, and 1/4 teaspoon of baking soda to the mixture.

Scrape any flour from the sides of the bowl and gently fold it into the dough with a spatula until just combined.

Gently fold in the 100 grams of corn flakes and 100 grams of chocolate chips until evenly distributed.

Pinch off small amounts of cookie dough and drop them onto the prepared baking tray. Do not roll, pat, or smooth the dough; the cookies should be rustic and spiky.

Bake in the preheated oven at 180°C for about 20 minutes.

If using multiple trays, switch the top tray to the bottom rack and the bottom tray to the top rack to ensure even baking.

Continue to bake for another 10 minutes or until the cookies are golden brown around the edges.
