In a large mixing bowl, combine the 250 grams of plain or strong flour, 125 grams of just boiling water, 1 to 2 teaspoons of ghee, butter or olive oil, and a pinch of salt.

Mix the ingredients together until a shaggy dough forms, then turn it out onto a clean surface and knead for about 3 minutes until smooth and elastic.

Cover the dough with a clean kitchen towel or plastic wrap and let it rest at room temperature for 30 minutes. This step is vital for allowing the gluten to relax, resulting in soft, pliable wraps.

After resting, divide the dough into 4 equal portions.

On a lightly floured surface, take one portion of dough and roll it out thinly using a rolling pin, aiming for a round shape approximately 8-10 inches in diameter.

Place one rolled-out wrap into the hot pan. Cook for about 30-60 seconds, or until bubbles begin to form on the surface and the underside has light brown spots.

Flip the wrap and cook the other side for another 30-60 seconds, until it is also lightly browned and cooked through.

Remove the cooked wrap from the pan and immediately place it under a clean tea towel to keep it warm and soft while you cook the remaining wraps. Repeat steps 7-8 for the remaining dough portions.
