Place the rotisserie chicken carcass into a large stockpot. Add the charred shallot and ginger, and the piece of daikon to the pot.

Pour enough water into the pot to fully cover all the ingredients. Add the spoonful of salt, the piece of rock sugar, the pho spice pack, the spoonful of pho ga soup base, and the splash of fish sauce.

Bring the broth to a rolling boil over high heat, then reduce the heat to low and let it gently simmer for 1 hour. This allows the flavors to meld and develop.

After simmering, carefully strain the broth through a fine-mesh sieve into a clean pot or large bowl, discarding all the solid ingredients. This will leave you with a clear, flavorful broth.

While the broth is simmering or after straining, blanch the pho noodles according to package directions in hot water until tender. Drain them well and divide them among your serving bowls.

Arrange the shredded chicken from the rotisserie over the noodles in each bowl. Add a generous handful of bean sprouts and arrange the thinly sliced yellow onion on top.

Garnish each bowl with chopped green onion and chopped cilantro.
