Preheat your oven to 375°F. Lightly spray a baking dish with cooking spray.
In a medium bowl, toss the butterflied shrimp with olive oil, Old Bay seasoning, smoked paprika, garlic powder, and black pepper. Set aside.

In a large bowl, combine the drained crab meat, mayonnaise, egg, minced garlic, bread crumbs, lemon juice, Dijon mustard, Worcestershire sauce, Old Bay seasoning, smoked paprika, and optional hot sauce and dried parsley. Mix thoroughly until all ingredients are well combined.

Take about 1 to 2 teaspoons of the crab mix and form it into a small ball. Place the crab ball into the butterflied shrimp, then gently wrap the shrimp around the crab mix, molding it to hold its shape. Repeat with the remaining shrimp and crab mix, arranging them in the prepared baking dish.

Bake the stuffed shrimp for 20 to 25 minutes, or until the shrimp are pink and cooked through and the crab mix is lightly golden.

For an optional topping, combine the melted butter, chopped fresh parsley, and fresh lemon juice. Brush or drizzle over the baked stuffed shrimp immediately after removing them from the oven.
