Heat the olive oil in a large pan or Dutch oven over medium heat.

Add the Italian sausage to the pan. Break up the sausage with a spoon and cook until it is thoroughly browned, about 5-7 minutes.

Carefully drain any excess grease from the pan, leaving a small amount for flavor.

Add the diced yellow onion to the pan with the cooked sausage. Sauté until the onion has softened and become translucent, about 3-5 minutes.

Add the minced garlic cloves to the pan. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
