Preheat your oven to 400°F. Line a baking sheet with parchment paper.

Unpackage the 7 ounce block of guava paste and slice it into thin pieces.

Unpackage the 4 ounce block of cream cheese and slice it into thin pieces.

Unroll the thawed puff pastry sheets onto a lightly floured surface.

Cut each puff pastry sheet into 9 equal squares.

Place one slice of cream cheese, followed by one slice of guava paste, in the center of 9 of the puff pastry squares.

Take the remaining 9 puff pastry squares and, using a small knife or cutter, cut two short parallel slits in the center of each square. These will be the top layers.

In a small bowl, crack the 1 large egg and add a splash of water. Whisk thoroughly to combine for the egg wash.

Lightly brush the edges of the pastry squares with the cream cheese and guava filling with the prepared egg wash.

Carefully place the cut pastry squares (with the slits) on top of the filled squares, aligning the edges.

Use the tines of a fork to crimp and seal the edges of each pastelito.

Brush the tops of all assembled pastelitos with the remaining egg wash. Transfer the pastelitos to the prepared baking sheet.

Bake in the preheated oven for 15-20 minutes, or until they are golden brown and puffed.

While the pastelitos are baking, prepare the simple syrup. Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Heat over medium heat, stirring continuously until the sugar dissolves and the mixture comes to a boil. Remove from heat immediately once it boils.

Once the pastelitos are removed from the oven, immediately brush them generously with the warm simple syrup.

Allow the pastelitos to cool slightly before serving.
