Preheat your waffle iron according to the manufacturer's instructions. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Set aside.

In a separate medium bowl, whisk together the large egg, milk, melted unsalted butter, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined. A few lumps are okay; do not overmix. Gently fold in the fresh blueberries.

Lightly spray the preheated waffle iron with cooking spray. Pour about 1/4 cup of batter per waffle bite section (or as directed by your waffle iron for smaller bites) onto the hot iron. Close the lid and cook for 3 to 5 minutes, or until the waffle bites are golden brown and cooked through.

Carefully remove the cooked waffle bites from the iron and transfer them to a serving plate. Repeat with the remaining batter. Serve warm with maple syrup and a dusting of powdered sugar, if desired.
