Prepare the Caesar Dressing/Aioli: In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and black pepper until smooth. Taste and adjust seasoning as needed. Set aside.

Prepare the Chicken Patties: In a medium bowl, gently combine the ground chicken with garlic powder, onion powder, dried oregano, salt, and black pepper. Do not overmix. Divide the mixture into 8 equal portions and loosely form into balls.

Cook the French Fries: Preheat your oven or air fryer according to the French fries package instructions. Cook the French fries until golden brown and crispy. Keep warm.

Cook the Chicken Patties: Heat a large cast-iron skillet or griddle over medium-high heat. Add 1 tablespoon of olive oil. Once hot, place 4 chicken balls onto the skillet, leaving space between them. Immediately use a sturdy spatula or burger press to firmly smash each chicken ball into a thin patty, about 1/4-inch thick. Cook for 2-3 minutes until golden brown and crispy on the bottom.

Flip and Melt Cheese: Flip the patties and immediately place one slice of provolone cheese on top of each patty. Cook for another 2-3 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through (internal temperature of 165°F). Remove the cooked patties from the skillet and set aside. Repeat with the remaining 4 chicken balls and 4 slices of cheese, adding the remaining 1 tablespoon of olive oil if needed.

Toast the Buns: While the last batch of patties is cooking, lightly toast the brioche buns, cut-side down, on the hot skillet for 1-2 minutes until golden brown. Alternatively, toast them in a toaster.

Assemble the Burgers: Spread a generous amount of Caesar dressing/aioli on both the top and bottom halves of each toasted brioche bun. Place a layer of shredded romaine lettuce on the bottom bun. Stack two cheesy chicken patties on top of the lettuce. Add another layer of shredded romaine lettuce on top of the chicken patties. Place the top bun to complete the burger.

Serve: Serve the Caesar Chicken Smash Burgers immediately with the crispy French fries on the side. Garnish the fries with chopped fresh parsley and provide any remaining Caesar dressing/aioli for dipping.
