Rinse the chicken pieces thoroughly under cold water to remove any bone fragments. Place the rinsed chicken in a large bowl.

Add the granulated sugar, chicken bouillon powder, fish sauce, black pepper, and optional caramel cooking sauce to the bowl with the chicken. Add the minced shallot and julienned ginger.

Mix all ingredients well, ensuring the chicken is evenly coated with the marinade. Let the chicken marinate at room temperature for 20 minutes.

Place a large pan or pot over medium-high heat. Add the marinated chicken and the 1/2 cup of water to the pan/pot. Stir to combine.

Remove the lid. If desired, add Thai chilis for extra spice. Increase the heat to medium-high and continue to simmer, uncovered, until the liquid reduces to your preferred consistency, about 15-20 minutes.

Garnish the Gà Kho Gừng with chopped green scallions and cilantro.
