Add minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Stir in the red curry paste and cook for another 1-2 minutes, stirring constantly, to toast the paste and deepen its flavor.

Pour in the coconut milk and chicken broth. Stir well to combine and bring the mixture to a gentle simmer. Add the fish sauce and brown sugar, stirring until the sugar is dissolved.

Add the sliced red bell pepper to the simmering curry. Cook for 3-4 minutes, until the pepper is slightly tender-crisp.

Add the shrimp to the curry. Cook for 3-5 minutes, stirring occasionally, until the shrimp turn pink and are cooked through. Be careful not to overcook them.

Remove the skillet from the heat. Stir in the fresh lime juice and baby spinach. The residual heat will wilt the spinach quickly.

Taste and adjust seasonings if necessary. Serve immediately over cooked jasmine rice, garnished with fresh chopped cilantro.
