Finely dice the yellow onion. In a medium skillet, melt the butter (or heat olive oil) over medium-low heat. Add the diced onions and cook slowly, stirring occasionally, for 20-25 minutes, or until deeply golden brown and caramelized. Remove from heat and let cool slightly.

In a medium mixing bowl or a mason jar, combine the Japanese mayonnaise, ketchup, sweet pickle relish, yellow mustard, and white vinegar.

Add the cooled caramelized onions to the sauce mixture.

Season with salt and freshly ground black pepper. Stir all ingredients thoroughly until well combined and smooth. Taste and adjust seasoning if necessary.

Cover the sauce and let it rest in the refrigerator for at least 7 minutes to allow the flavors to meld. For best results, let it chill for 30 minutes to an hour.
