In a medium bowl, combine the 1/4 cup of cornflour with 2-3 tablespoons of coconut milk (taken from the 13.5 fl oz can). Whisk until a smooth, lump-free mixture is obtained.

Pour the cornflour mixture into a medium saucepan.

Add the remaining coconut milk from the can to the saucepan and whisk well to combine.

Place the saucepan on the stove over low to medium heat.

Stir in the 1/4 cup of granulated sugar and the pinch of salt into the mixture in the pan.

Continuously stir the mixture with a whisk or spatula. Continue stirring until the mixture thickens and becomes glossy, approximately 5-8 minutes.

Once thickened, immediately pour the hot pudding mixture into a serving bowl or individual small molds.

Allow the pudding to cool slightly at room temperature, then transfer it to the refrigerator and chill for at least 2 hours, or until fully set.

If using molds, carefully unmold the pudding onto serving plates. If using a bowl, simply serve directly from the bowl.

Garnish with almond slivers, if desired, and serve chilled.
