Add 100g of couscous to a bowl. Pour 100ml of boiling water over the couscous. Season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Add 2 tablespoons of olive oil. Stir everything together and let it sit for 5 minutes.

While the couscous is resting, chop 2 cucumbers and add them to a large mixing bowl. Crumble 100g of feta cheese into the bowl. Add a handful of olives. Halve a handful of cherry tomatoes and add them. Slice 1 red onion and add it to the bowl. Chop 1 bell pepper and add it. Drain and rinse 400 grams of chickpeas and add them to the bowl. Finely chop 1 bunch of parsley and 1 bunch of mint, then add both to the bowl.

In a separate small bowl, combine 120ml of extra virgin olive oil, the juice of 2 lemons, and 2 crushed garlic cloves. Add a large handful of chopped mint (separate from the mint for the salad). Stir in 1 tablespoon of honey and 1 tablespoon of Dijon mustard. Season the dressing with salt and pepper to taste, then whisk until thoroughly combined.

Slice 100g of halloumi cheese. Place the halloumi slices into a hot pan and cook for 2 minutes on each side until they are golden brown. Once cooked, remove the halloumi from the pan and cut it into smaller, bite-sized pieces.

Add the prepared couscous to the large bowl containing the chopped vegetables. Pour the dressing over all the salad ingredients. Add the cut halloumi pieces. Mix everything together thoroughly to ensure all ingredients are well coated with the dressing.
