In a medium bowl, gently mix the ground beef with salt and black pepper. Divide the seasoned beef into 8 equal portions. Carefully shape 4 portions into the number '6' and the remaining 4 portions into the number '7'. Ensure they are thin enough to cook through quickly.

Heat the olive oil in a large non-stick frying pan over medium-high heat. Once hot, carefully place the shaped beef patties into the pan. Cook for 2 to 3 minutes per side, or until well browned.

While the patties are cooking, use a knife or small cookie cutters to cut the American cheese slices into matching '6' and '7' shapes. Similarly, cut the romaine lettuce leaves and tomato slices into '6' and '7' shapes.

Flip the patties to cook the other side. Immediately place the shaped cheese slices on top of the hot patties. Cover the pan with a lid for 1 to 2 minutes to allow the cheese to melt evenly.

To assemble the burgers, place the bottom halves of the mini burger buns on a serving platter. Top each bun with a cheesy '6' or '7' shaped patty. Layer with the shaped lettuce and tomato.

Squeeze a generous amount of yellow mustard over the tomato and other toppings. Finally, place the shaped sesame-seed topped bun halves on top to complete your '6-7' burgers. Serve immediately.
