In a large skillet or Dutch oven, brown the ground beef over medium-high heat, breaking it apart with a spoon. Drain any excess fat.

Transfer the browned ground beef to the slow cooker insert. Add the chopped yellow onion, diced carrots, diced celery, and minced garlic to the slow cooker.

Pour in the crushed tomatoes, tomato paste, beef broth, and red wine (if using). Stir in the dried oregano, dried basil, bay leaves, salt, and black pepper.

Cover the slow cooker and cook on low for 8 hours or on high for 4 hours. If desired, stir in the milk during the last 30 minutes of cooking for added richness.

Once cooked, remove the bay leaves. Taste and adjust seasoning as needed.

Cook your preferred pasta according to package directions. Serve the bolognese over the cooked pasta, garnished with freshly grated Parmesan cheese and chopped fresh parsley.
