In a large bowl, combine the pork mince, finely chopped spring onion, minced garlic, 3 tablespoons soy sauce, sesame oil, 1 tablespoon chilli oil, rice wine vinegar, and chopped coriander. Mix well until fully combined. Add 2-3 tablespoons of water to the mixture and slowly incorporate.

Dunk the wonton wrappers in water. Line the base of an oven-safe dish with a layer of these wet wonton wrappers. Spread a layer of the prepared pork mixture evenly over the wrappers, pressing it right to the edges. Add another layer of wet wonton wrappers, ensuring the meat is fully covered. Repeat this layering process until all the pork mixture is used, finishing with a final layer of wonton wrappers on top.

Pour the 1/4 cup chicken stock evenly over the top layer of the assembled lasagne.

Place the oven-safe dish containing the lasagne into a large deep pan or pot. Carefully pour hot water into the larger pan so it comes up around the sides of the dish, reaching near the top. Cover the large pan with a lid and cook on the stovetop over medium heat for 30-35 minutes, or until the pork is cooked through and the wonton layers are soft and tender.

Carefully remove the lasagne dish from the pan. Top the cooked dumpling lasagne with extra soy sauce, chilli oil or chilli crunch, finely sliced spring onions, sesame seeds, and fresh coriander before serving.
