Preheat your oven to 400°F. Place the russet potatoes directly on the oven rack and bake for about 45 minutes, or until they are cooked through and tender.

While the potatoes are baking, thinly slice the yellow onion and bell peppers into strips.

Heat a large pan (such as a non-stick skillet) over medium-high heat. Add the sliced onion and bell peppers to the pan. Season with salt and pepper.

Cover the pan with a lid and cook the vegetables for about 15 minutes, stirring occasionally. Add splashes of water every few minutes to help soften the vegetables. Once tender, remove the cooked vegetables from the pan and set aside.

Add the thinly sliced sirloin steak to the same pan over medium-high heat. Add the Worcestershire sauce, garlic powder, salt, and pepper to the steak.

Stir and cook the steak for 5-7 minutes, or until cooked to your desired doneness, depending on the thickness of the slices.

Once the potatoes are baked, carefully remove them from the oven. Slice each potato open lengthwise and use a fork to loosen the inside flesh. Season the inside of each potato with salt and pepper.

Place 1 slice of provolone cheese into each potato. Evenly divide the cooked steak, peppers, and onions among the four potatoes.

Top each potato with a serving of low-fat white cheddar cheese. Place the loaded potatoes on a baking sheet.

Return the loaded potatoes to the oven for 5-10 minutes, or until the cheese is melted and everything is hot and bubbly.

Serve immediately and enjoy!
