If using dried wide rice noodles, prepare them according to package directions. For fresh noodles, gently separate them to prevent sticking. In a small bowl, whisk together all sauce ingredients (oyster sauce, dark soy sauce, light soy sauce, white vinegar, granulated sugar, and white pepper). Set aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until shimmering. Add the sliced chicken and stir-fry until cooked through and lightly browned, about 3-4 minutes. Remove the chicken from the wok and set aside.

Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Add the Chinese broccoli stems and stir-fry for 1-2 minutes, then add the leaves and stir-fry until slightly wilted, about 1-2 more minutes.

Push the vegetables to one side of the wok. Crack the egg into the empty space and scramble until just set. Break it into smaller pieces and mix with the vegetables.

Add the prepared rice noodles and the cooked chicken back into the wok with the vegetables and egg. Pour the prepared sauce over everything. Toss vigorously to combine all ingredients and ensure the noodles are evenly coated with the sauce. Continue to stir-fry for 2-3 minutes, allowing the noodles to absorb the sauce and develop a slightly charred flavor.
