Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Add 1 pound of ground beef to the pot. Break the beef into small pieces using a wooden spoon.

Season the beef with 1 teaspoon of salt and 1 teaspoon of black pepper.

Cook the beef until it is completely browned. Once browned, drain any excess fat from the pot.

Add 1/2 cup of diced onion, 1/2 cup of diced carrots, and 1/2 cup of diced celery to the pot with the cooked beef.

Add 1 tablespoon of butter to the vegetables and cook until they are softened, which takes approximately 5-7 minutes.

Add 2 cloves of minced garlic to the pot and cook for 1 minute until fragrant.

Stir in 1/4 cup of gochujang and cook for 2 minutes, ensuring it is well mixed with the meat and vegetables.

Pour in 1/4 cup of red wine and deglaze the pot, scraping up any browned bits from the bottom.

Add 1 cup of beef broth to the pot. Bring the sauce to a simmer, then reduce the heat to low, cover the pot, and let it cook for at least 30 minutes.

While the sauce simmers, bring a separate large pot of water to a rolling boil. Add salt to the boiling water.

Cook the paccheri pasta according to the package directions until it is al dente.

Before draining the pasta, reserve 1/4 cup of the starchy pasta water.

Add the cooked pasta directly to the bolognese sauce in the pot.

Pour in 1/2 cup of heavy cream and the 1/4 cup of reserved pasta water.

Stir everything together until the pasta is well coated with the sauce and the sauce becomes creamy.

Add 1/4 cup of grated Parmesan cheese to the pasta and sauce, and stir to combine.

Serve the Gochujang Bolognese Pasta immediately, garnished with fresh chopped parsley and additional Parmesan cheese, if desired.
