To prepare the bacon jam, chop 1 pack of bacon into small pieces. Chop 1/2 yellow onion and 1 jalapeño. Place a pan on a preheated griddle. Add the chopped bacon to the hot pan and cook until it starts to render.

Add the chopped yellow onion and jalapeño to the pan with the bacon. Continue to cook, stirring occasionally, until the onions are softened and the bacon is cooked.

Once cooked, add 2 tablespoons of brown sugar, 1 tablespoon of Worcestershire sauce, 1 to 2 tablespoons of apple cider vinegar, and 2 tablespoons of maple syrup to the pan. Season with salt, pepper, and garlic powder to taste. Stir everything together and let it simmer, reducing until it reaches a jam-like consistency. Once done, set aside.

To prepare the mayo spread, in a small bowl, combine 1/2 cup of Dukes mayonnaise, 1 tablespoon of sweet relish, 1 teaspoon of mustard, 1 teaspoon of Worcestershire sauce, 1 to 2 tablespoons of ketchup, and a splash of white vinegar. Season with salt, pepper, and garlic powder to taste. Stir all ingredients until well combined. Set aside.

To prepare the burger patties and buns, divide 1 1/2 pounds of 80/20 ground beef into 4 equal-sized balls. Butter the brioche buns generously. Place the buttered brioche buns face down on the griddle to toast until golden brown. Once toasted, remove them from the griddle.

To cook the smashburgers, lightly oil the hot griddle surface. Place the beef balls onto the hot griddle. Season the beef balls generously with salt, pepper, and garlic powder. Using a burger press or a sturdy spatula, firmly smash each beef ball down into a thin patty.

Once a crust forms on the bottom of the patties, place a slice of Tillamook cheddar cheese on top of each patty. Using a spatula, scrape the patties off the griddle, ensuring a good crust is maintained.

To assemble the smashburgers, take a toasted bottom brioche bun. Spread a layer of the prepared mayo spread on the bottom bun. Add a few pickle slices. Place one cheeseburger patty on top of the pickles. Add a generous spoonful of the prepared bacon jam over the first patty.

Place a second cheeseburger patty on top of the bacon jam. Add another spoonful of bacon jam on the second patty. Top with the toasted brioche top bun. Serve and enjoy!
