In a medium pot, combine the condensed French onion soup, beef consommé, and 1 can of water (using the empty consommé can for measurement).

Add the minced garlic, Bacon Up Bacon Grease, and shaved sweet onion to the pot.

Whisk the mixture thoroughly to combine all ingredients. Bring the mixture to a simmer over medium heat to create the au jus.

While the au jus is simmering, preheat your broiler or toaster oven. Slice the hoagie rolls lengthwise, being careful not to cut all the way through.

Place two slices of provolone cheese on the cut side of each hoagie roll.

Toast the hoagie rolls with the provolone cheese under the broiler or in the toaster oven until the cheese is melted and bubbly, about 1-2 minutes. Watch carefully to prevent burning.

Dip the sliced roast beef into the simmering au jus mixture, allowing it to warm through and absorb some of the flavor.

Place the dipped roast beef onto the toasted hoagie rolls with the melted provolone cheese. Close the sandwiches.
