In a large mixing bowl, combine the chickpea flour, rice flour, and cornstarch.

Add the red chili powder, turmeric powder, cumin powder, coriander powder, salt, and asafoetida to the dry ingredients.
Pour in 1/4 cup of oil. Using your hands, mix all the dry ingredients and oil thoroughly until well combined and the mixture resembles coarse crumbs.

Gradually add 1/2 cup of water, a little at a time, and knead the mixture to form a firm, pliable dough. The dough should not be sticky.

Cover the dough with a clean cloth or plastic wrap and let it rest at room temperature for 15 minutes.

While the dough rests, prepare the seasoning. In a small bowl, combine 1 tablespoon red chili powder, 1 tablespoon chaat masala, 1 teaspoon black salt, and 1/2 teaspoon citric acid. Mix well and set aside.

After the dough has rested, take a small portion and roll it out very thinly on a clean, lightly floured surface. Aim for a thickness similar to a tortilla or even thinner.

Using a knife or pizza cutter, cut the thinly rolled dough into strips, approximately 1/2 inch wide and 2-3 inches long. Carefully separate the strips.

Heat oil for deep frying in a large pan or Dutch oven over medium-high heat until it reaches approximately 350°F (175°C).

Carefully place a small batch of dough strips into the hot oil, ensuring not to overcrowd the pan. Fry until they turn golden brown and become crispy, about 2-3 minutes per batch, flipping occasionally.

Remove the fried strips from the oil with a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.

Repeat steps 7-11 with the remaining dough until all the chevro chips are fried.

Once all the chips are fried and slightly cooled, place them in a large bowl or container with a lid. Sprinkle the prepared seasoning generously over the chips.

Secure the lid and shake the bowl vigorously to ensure the seasoning is evenly coated on all the chips.

The Chevro Chips are now ready to serve. Enjoy them as a snack by the pool, during game night, or a movie marathon!
