In a small saucepan, combine 1/4 cup soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, and 1 teaspoon sriracha. Heat the mixture over medium heat, stirring continuously until the sauce thickens slightly to a glaze-like consistency.

Add the double-fried chicken pieces to the saucepan with the sauce. Toss until all chicken pieces are evenly coated with the sauce.

Transfer the sauced chicken to a serving dish and garnish with sesame seeds before serving.
