Melt 2 tablespoons of butter in a large pan over medium heat.

Add 4-5 finely chopped garlic cloves and 1 chopped medium onion to the pan. Sauté until the onion is tender, about 5-7 minutes.

Stir in 1 cup of diced mixed bell peppers, 1/2 cup of sweet corn, and 1 cup of sliced mushrooms (if using).

Season the vegetables with 1 teaspoon of salt (or to taste), 1/2 teaspoon of black pepper, and 1 teaspoon of Italian seasoning. Continue to sauté until the vegetables are just tender, about 5-8 minutes. Remove from heat and set aside.

In a separate saucepan, melt 2 tablespoons of butter over medium heat.

Add 2 tablespoons of all-purpose flour to the melted butter and whisk continuously for 1-2 minutes to form a roux.

Gradually add 2 cups of milk to the roux, whisking constantly to prevent lumps, until the sauce begins to thicken.

Stir in 1 cup of blanched and blended spinach.

Season the spinach white sauce with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of Italian seasoning.

If desired, stir in 1/2 cup of grated cheese for extra creaminess. Cook until the sauce is thick and creamy, then remove from heat.

Preheat your oven to 180°C (350°F).
To begin assembling, spread a thin layer of 1 1/2 cups of marinara sauce evenly in the bottom of a baking dish.
Place 9 lasagna sheets (or as needed to cover the dish) over the marinara sauce.

Spread a layer of the prepared spinach white sauce over the lasagna sheets.

Add a layer of the sautéed vegetable filling over the white sauce.

Sprinkle a portion of the 2-2 1/2 cups of grated mozzarella cheese generously over the vegetable layer.

Repeat the layering process: marinara sauce, lasagna sheets, spinach white sauce, sautéed veggies, and mozzarella cheese, until all ingredients are used or the dish is full.

Finish the top layer with the remaining spinach white sauce, followed by a generous amount of the remaining mozzarella cheese, and finally, sprinkle with 1/4 cup of Parmesan cheese (if using).

Bake the assembled lasagna in the preheated oven for 30-35 minutes, or until the cheese is melted, bubbly, and golden brown.

Let the lasagna rest for 5-10 minutes before slicing and serving.
