Preheat your oven to 375°F (190°C) if baking, or prepare a large skillet for pan-frying. Lightly grease a baking sheet with olive oil or coat the skillet with olive oil over medium heat.

In a large mixing bowl, combine the ground lamb, finely grated carrot, finely grated onion, sourdough breadcrumbs, egg, garlic powder, ground cumin, ground cinnamon, salt, and black pepper (if using). If using fresh parsley, add it now.

Using your hands, gently but thoroughly mix all the ingredients until just combined. Be careful not to overmix, as this can make the kofta tough.

Form the mixture into small, bite-sized kofta shapes, about 1-inch in diameter. You can make them into small balls or mini logs. Arrange them on the prepared baking sheet or set aside for pan-frying.

To bake: Place the kofta bites in the preheated oven and bake for 15-20 minutes, flipping halfway through, until golden brown and cooked through. To pan-fry: Cook the kofta bites in the oiled skillet over medium heat for 3-4 minutes per side, turning frequently, until evenly browned and cooked through.

While the kofta bites are cooking, prepare the optional yogurt dipping sauce. In a small bowl, whisk together the plain Greek yogurt, lemon juice, and salt. If using, stir in the finely chopped fresh mint.

Once cooked, remove the kofta bites from the oven or skillet. Serve warm with the optional yogurt dipping sauce on the side.
