Preheat your oven to 425°F. Lightly grease a 9x13 inch baking dish.

Place the thin-cut chicken breasts in the prepared baking dish. Drizzle them with 1 tablespoon of olive oil, then season evenly with garlic salt and black pepper.

Brush the top of each chicken breast generously with Dijon mustard. Evenly distribute the shredded Monterey Jack cheese over the mustard layer. Finally, sprinkle the slightly crumbled crispy fried onions over the cheese.

Bake the chicken in the preheated oven for 15 to 20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the topping is golden brown and crispy.

While the chicken bakes, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the frozen whole green beans and onions with bacon seasoning to the hot skillet. Season with Garlic & Herb seasoning. Toss and cook for 10 to 15 minutes, stirring occasionally, until the green beans are tender and heated through.

Once the chicken is done, remove it from the oven. Serve immediately alongside the warm mashed potatoes (topped with butter and a dash of black pepper) and the sautéed green beans.
