Prepare the onions by slicing one onion into rings. Ensure the rings are not too thick or too thin for even cooking.

Prepare the burger patties: Divide the mince meat into 8 equal portions. Flatten each portion into a thin patty. This can be done by placing the mince meat on a plate covered with plastic wrap and pressing down. Season both sides of the patties generously with salt and pepper.

Prepare the sauce: In a small bowl, combine the mayonnaise, ketchup, mustard, sriracha, diced pickled jalapeños, and pickle juice. Mix all ingredients thoroughly until a uniform sauce is formed. The jalapeño juice will enhance the flavor.

Cook the patties and onions: Heat 2 tablespoons of oil in a large pan over medium-high heat. Place 2-4 mince meat patties in the hot pan (depending on pan size) and use a spatula to smash them flat. Add a portion of the sliced onion rings to the pan alongside the patties. Cook the patties until they are browned on one side (about 2-3 minutes), then flip them over. Flip the onion rings as well to caramelize evenly. Immediately place a slice of American cheese on top of each cooked patty to melt. Continue cooking until the cheese is fully melted and the onions are caramelized (about 2-3 more minutes). Remove from pan and repeat with remaining patties and onions.

Assemble the wrap: Lay a large flour tortilla flat on a clean surface. Arrange a line of the cooked, caramelized onions down the center of the tortilla. Spoon a generous amount of the prepared sauce over the onions. Carefully transfer two cooked burger patties, topped with melted American cheese, onto the sauce. Spoon more of the prepared sauce over the patties. Add another layer of cooked, caramelized onions on top of the patties and sauce.

Fold the wrap: To form the wrap, first fold the two opposite sides of the tortilla inwards towards the center. Then, starting from the bottom edge, roll the tortilla tightly upwards to create a sealed wrap.

Crisp the wrap: Place the assembled wrap into a hot pan (the same pan used for cooking the patties and onions, or a clean one) over medium heat. Cook it until it is golden brown and crispy on all sides, about 2-3 minutes per side. Repeat for all wraps.

Serve: Remove the crispy wrap from the pan and cut it in half. Optionally, squeeze additional ketchup directly into the cut wrap before serving.
