Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Ensure the whole snapper is thoroughly cleaned and scaled. Using a sharp knife, score the fish deeply on both sides, making 3-4 diagonal cuts that go almost to the bone.

Drizzle 2 tablespoons of olive oil over both sides of the fish and rub it in. In a small bowl, combine the fish seasoning, all purpose seasoning, Old Bay (Lemon and Herb), and black pepper. Generously season both the inside cavity and the scored exterior of the fish with the seasoning mixture.

Prepare the stuffing vegetables: slice the red, green, and yellow bell peppers, red onion, and garlic cloves. Chop the fresh parsley.

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced bell peppers, red onion, and garlic. Sauté for 5-7 minutes, or until the vegetables are softened. Stir in the chopped parsley.

Carefully fill the cavity of the seasoned snapper with the sautéed vegetable mixture. Place 2-3 slices of lemon and 2-3 slices of lime inside the stuffed fish cavity.

Place the stuffed snapper on the prepared baking sheet. Arrange the remaining lemon and lime slices on top of the fish and around it on the baking sheet.

Roast the snapper in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

Once roasted, carefully remove the fish from the oven and transfer it to a serving platter. Serve immediately.
