Prepare the tamarind extract: While the tamarind is soaking, mash it well with your fingers in the hot water. Strain the pulp through a fine-mesh sieve, pressing to extract all the liquid. Discard the solids. Set aside the tamarind extract.

Prepare the rasam powder: In a small dry pan over medium-low heat, roast the toor dal, black peppercorns, cumin seeds, coriander seeds, and dry red chilies until fragrant and lightly golden, about 3-5 minutes. Be careful not to burn them. Let cool completely, then grind to a fine powder in a spice grinder or mortar and pestle.

Combine rasam ingredients: In a large pot or saucepan, combine the chopped tomatoes, turmeric powder, salt, and 3 cups of water. Bring to a boil, then reduce heat and simmer for 5-7 minutes, until the tomatoes are soft and slightly pulpy.

Add tamarind and rasam powder: Pour in the prepared tamarind extract and add the freshly ground rasam powder to the simmering tomato mixture. Stir well to combine. Bring the mixture to a gentle simmer again. Do not boil vigorously after adding the tamarind.

Prepare the tempering (tadka): In a small pan, heat the ghee over medium heat. Once hot, add the mustard seeds. When they start to splutter, add the cumin seeds and curry leaves. Fry for a few seconds until fragrant. Add the asafoetida and stir quickly.

Finish the rasam: Pour the hot tempering into the simmering rasam. Stir gently. Let the rasam simmer for another 2-3 minutes, allowing the flavors to meld. Do not overcook; the rasam should just come to a frothy boil, not a rolling boil.

Garnish and serve: Remove from heat, stir in the fresh cilantro. Serve hot with steamed rice, or as a comforting soup.
