In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the 500 grams of sliced mushrooms and 3 cloves of minced garlic. Cook until the mushrooms are golden brown and tender.

Transfer the sautéed mushrooms and garlic into a mixing bowl. Add 1 cup of cottage cheese, 1/2 cup of heavy cream, 1 teaspoon of dried thyme, salt to taste, and pepper to taste. Mix all the ingredients until well combined.

Transfer the mushroom mixture from the bowl into a baking dish. Sprinkle 1 cup of grated cheese (cheddar or mozzarella) evenly on top of the mixture. Preheat the oven to 375°F (190°C).

Bake the assembled gratin in the preheated oven for 25–30 minutes until the top is golden brown and bubbly. Garnish with fresh parsley before serving. Enjoy!
