In a medium bowl, crumble 120 grams of feta cheese, using a fork to break it down into smaller pieces.

Crack 8 large eggs into the bowl with the crumbled feta. Mix the feta and eggs thoroughly with a fork until they are well combined into a smooth, yellowish mixture.

Stir in 8 chopped spring onions and 2 teaspoons of sesame seeds into the feta and egg mixture. Optionally, add any herbs, spices, or seasonings of your choice at this stage for added flavor.

Prepare your hot honey: In a small microwave-safe bowl, mix runny honey with a pinch of chilli flakes. Microwave for 10-15 seconds, then allow it to cool slightly before drizzling. This can be done while the toast bakes.

Preheat your air fryer to 180°C or your oven to 180°C fan (200°C conventional). Place 8 slices of bread on a baking tray lined with parchment paper or in an air fryer basket.

Spoon the prepared feta mixture generously on top of each of the 8 slices of bread, spreading it evenly to cover the surface.

Air fry or oven bake for 12-14 minutes, or until the feta toast is golden brown and the feta mixture is set and slightly puffed.

Serve the golden-brown feta toast on a plate. Drizzle generously with the prepared hot honey over the cooked toast.

Optionally, sprinkle additional black and white sesame seeds on top of the drizzled hot honey for extra texture and visual appeal. Enjoy immediately!
