Pierce the large baking potato several times with a fork.

Microwave the potato for 6 minutes. Adjust the time if using a smaller potato.
Spray the microwaved potato with olive oil and season generously with sea salt.

Wrap the seasoned potato in foil and air fry at 180°C for 55 minutes.

Unwrap the potato and cook in the air fryer at 200°C for another 10 minutes until the skin is crispy.

While the potato is cooking, season the butterflied king prawns with garlic pepper, sea salt, Slap Ya Mama Cajun seasoning, and dried parsley.

Spray a pan with olive oil and fry the seasoned prawns until they turn pink.

Add 1 knob of garlic butter to the pan with the prawns and baste them with the melted butter for 1 minute.

Remove the prawns from the pan, keeping the buttery juices in the pan for the sauce.

In the same pan used for the prawns (retaining the buttery juices), add 1 fresh knob of garlic butter and the finely chopped large garlic clove.

Cook the garlic in the butter until it turns golden.

Add the double cream, chicken stock powder, garlic pepper, garlic granules, and a pinch of salt to the pan. Simmer until the sauce slightly thickens.

Stir in the cream cheese and mozzarella into the sauce until melted and combined.

Once the potato is crispy, cut it open down the middle. Add garlic butter, salt, pepper, and mozzarella into the potato.

Mash the inside of the potato with the added ingredients until the mozzarella is melted and the potato is fluffy and cheesy.

Top the mashed potato with the cooked Cajun king prawns.

Spoon the creamy garlic sauce generously over the prawns and potato.

Finish the dish with crispy onions and fresh parsley for garnish.
