Thoroughly wash the banana peel. Cut the banana peel into small, uniform pieces, approximately 1/2-inch to 1-inch in size.

Place the cut banana peel pieces into a medium-sized bowl. Add the cloves, bay leaves, and cinnamon sticks to the bowl. Break the cinnamon sticks into smaller segments to help release their flavor.
