Preheat your oven to 400°F. Place the puff pastry sheet on a cutting board. Cut the sheet into 4 rectangles, each approximately 4 to 4 1/2 inches wide. Using a fork, poke a few holes in each pastry rectangle to allow steam to escape.

Carefully press each puff pastry rectangle into individual molds, ensuring the dough is pushed well into the sides and corners to create a cup shape.

Line the inside of each dough-lined mold with a small piece of aluminum foil. Press the foil down firmly against the dough to prevent the pastry from puffing up excessively during baking. This will help maintain the cup shape.

Bake the pastry in the preheated oven for 25 to 30 minutes, or until golden brown and cooked through.

Once baked, carefully remove the pastry from the molds and slide out the aluminum foil. If the tops of the pastry cups are uneven, use a microplane or a fine grater to gently shave off any high spots, creating an even surface.

If preparing these bites ahead of time, store the baked pastry cups in an airtight container at room temperature for up to 2 days.

In a medium bowl, combine the softened brie (with rind removed) and cream cheese. Whip them together using a hand mixer or a fork until the mixture is smooth and creamy. Transfer the mixture to a piping bag fitted with a star tip (or a Ziploc bag with a corner snipped off).

Wash and dry the fresh figs. Cut them into thin slices, then halve each slice.

In a small bowl, mix the chipotle powder into the fig jam until well combined.

Pipe the whipped brie and cream cheese mixture inside each baked puff pastry rectangle, filling them generously.

Top each pastry bite with plenty of crushed pistachios, a spoonful of the chipotle fig jam, a few fig slices, a drizzle of honey, and a sprinkle of flaky salt to taste. Serve immediately or at room temperature.
