In a small pot, combine the coconut milk and granulated sugar. Place the pot over medium heat.

Whisk the coconut milk and sugar mixture continuously until it comes to a rolling boil.

While the coconut mixture heats, in a separate small bowl, combine the cornstarch and water. Whisk thoroughly until a smooth slurry is formed with no lumps.

Once the coconut milk mixture is boiling, slowly pour the cornstarch slurry into the pot, whisking constantly to prevent lumps from forming.

Reduce the heat to low and continue to cook the mixture for 10 minutes, whisking frequently. The mixture will thicken considerably during this time.

Once the mixture has thickened to a pudding-like consistency, remove the pot from the heat.

Immediately pour the hot haupia mixture into an 8-inch by 8-inch pan, spreading it evenly.

Allow the haupia to cool at room temperature in the pan for 15 minutes.

After cooling, cover the pan tightly with plastic wrap.

Refrigerate the haupia overnight, or for at least 8 hours, until it is completely set and firm.

Once set, cut the haupia into desired squares and serve chilled.
