Heat olive oil in a large skillet over medium-high heat. Add the Impossible ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes.

Drain any excess liquid from the skillet. Stir in the Trader Joe's Taco Seasoning Mix and water. Bring to a simmer and cook for 3-5 minutes, or until the liquid has mostly evaporated and the 'meat' is well coated.

While the taco 'meat' is cooking, prepare the salad ingredients. In a large bowl, combine the chopped Trader Joe's Organic Romaine & Chicory Blend, rinsed black beans, drained Trader Joe's Organic Super Sweet Cut Corn, halved grape tomatoes, diced avocado, sliced red onion, and chopped cilantro.

Divide the salad mixture evenly among 4 bowls. Top each bowl with a generous serving of the cooked Impossible taco 'meat'.

Drizzle each salad bowl with Trader Joe's Organic Ranch Dressing and Trader Joe's Green Dragon Hot Sauce to taste. Finish with a sprinkle of crushed Trader Joe's Organic Blue Corn Tortilla Chips for crunch.
