Finely chop the red onion and the fresh spinach leaves. Set aside.

Heat oil in a pan over medium heat. Once the oil is hot, add the cumin seeds and let them splutter for a few seconds.

Add the minced garlic to the pan and sauté for about 30 seconds until fragrant. Then, add the finely chopped red onion.

Add salt, turmeric powder, and red chili powder to the pan with the onions. Stir well to combine all ingredients.

Continue to sauté the mixture, stirring occasionally, until the onions are softened and translucent, and the spices are fragrant, about 3-4 minutes.

Add the finely chopped spinach to the pan. Stir the spinach into the onion and spice mixture and cook until it wilts completely and is well combined, about 2-3 minutes.

Remove the pan from the heat and let the spinach mixture cool down for a few minutes.

In a large bowl, pour the plain yogurt. Add the cooled spinach and onion mixture to the yogurt.

Stir everything together until the yogurt is fully incorporated and the mixture becomes creamy and uniform.

Taste and adjust seasoning if necessary. Serve the creamy Palak Raita immediately with hot rice or biryani.
