Add the condensed milk, desiccated coconut, butter, and a pinch of salt (if using) to a pan.

Cook the mixture on low heat, stirring continuously, until it thickens and starts pulling away from the sides of the pan. This will take approximately 10-15 minutes.

Let the cooked mixture cool completely in the refrigerator. This will take at least 1 hour.

Once cooled, roll the mixture into small balls, about 1 inch in diameter.

Chill the rolled balls for 20 minutes until they are firm.

In a separate pan, combine the sugar and water. Cook this mixture over medium heat without stirring until it transforms into an amber caramel. This will take approximately 10-15 minutes. Be careful not to burn the caramel.

Take each chilled coconut ball and carefully dip it into the amber caramel, ensuring it's fully coated. Use a skewer or a fork to handle the balls.

Lift the ball, allow any excess caramel to drip off, and then place it on parchment paper to set. Repeat for all balls.

Once set, the Bala Baiana are ready to enjoy. Allow them to cool completely on the parchment paper before serving.
