Add the scooped potato flesh to the pot with the soup base. Using a potato masher, mash the potatoes directly in the pot until they are mostly smooth, leaving some small chunks for texture if desired.

Stir in the 2 cups of shredded cheddar cheese until it is completely melted and the soup is smooth and creamy. Taste and adjust seasonings if necessary.
