Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup.

Heat the olive oil in a large skillet over medium-high heat. Add the spicy Italian sausage, breaking it up with a spoon as it cooks. Continue to cook until the sausage is browned and cooked through, about 5 to 7 minutes. Drain any excess fat from the skillet.

Add the finely diced yellow onion to the skillet with the cooked sausage. Sauté for 3 to 4 minutes until the onion begins to soften. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Stir in the fresh spinach, crushed red pepper flakes, dried oregano, salt, and black pepper. Cook until the spinach wilts down, which should take about 2 to 3 minutes. Remove the skillet from the heat.

Place the flatbreads on the prepared baking sheet. Divide the sausage and spinach mixture evenly among the flatbreads, spreading it to the edges.

Evenly sprinkle the shredded mozzarella cheese and grated Parmesan cheese over each flatbread.

Bake in the preheated oven for 8 to 12 minutes, or until the cheese is melted and bubbly and the flatbread edges are golden brown and slightly crispy.

Carefully remove the flatbreads from the oven. If desired, garnish with fresh chopped basil. Slice into portions and serve immediately.
