Heat the olive oil in a large skillet or pan over medium heat.

Add the chopped onion and optional chopped jalapeño to the pan. Sauté for 3 to 5 minutes, or until the onion softens and becomes translucent.

While the aromatics are cooking, prepare the tofu. Open the block of extra-firm tofu, drain any excess water, and wrap it in a paper towel. Give it a light squeeze to remove more moisture, but do not press it excessively.

Crumble the tofu by hand into a medium bowl. Adjust the size of the crumbled pieces based on your preference; smaller pieces will create a more 'ground meat' like texture.

Season the crumbled tofu by adding the garlic powder, onion powder, paprika, chili powder (use 1/2 teaspoon for less heat if preferred), 1/2 teaspoon of salt, and ground cinnamon to the bowl. Mix well to ensure the tofu is evenly coated with the spices.

Once the onions and jalapeños are sautéed, add the seasoned, crumbled tofu to the pan. Cook on the stove for 10 to 15 minutes, stirring occasionally. For a crispier and drier 'meat' texture, cook longer on a slightly higher heat.

After cooking, taste the tofu taco meat and add more salt or any other seasonings if needed to suit your preference.

Serve the finished tofu taco meat in tacos, burritos, nachos, or burrito bowls. It can also be enjoyed plain.
