Bring a large pot of generously salted water to a rolling boil. Add the fettuccine and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining the pasta.

While the pasta cooks, heat the butter and olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced cremini mushrooms and cook, stirring occasionally, until they are golden brown and have released their liquid, about 7-10 minutes.

Add the minced shallot to the skillet and cook for 2-3 minutes until softened and fragrant. Stir in the minced garlic and cook for another 1 minute until aromatic, being careful not to burn it.

Pour in the dry white wine, scraping up any browned bits from the bottom of the skillet. Let the wine simmer and reduce by about half, which should take 2-3 minutes.

Reduce the heat to medium-low and stir in the heavy cream. Bring the sauce to a gentle simmer and cook for 3-5 minutes, or until it has slightly thickened. Season with salt and freshly ground black pepper.

Add the cooked and drained fettuccine directly to the skillet with the sauce. Toss to coat the pasta evenly. Stir in the grated Parmesan cheese. If the sauce is too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency.

Serve immediately, garnished with fresh chopped parsley and extra grated Parmesan cheese, if desired.
